Waffles

Don't settle for soft floppy waffles.   This recipe yields crispy healthy waffles that freeze easily so make up a batch for later usage.

W A F F L E S:  Set waffle iron to high and spray with cooking spray (turning down one notch once batter is poured in it).  In a small bowl mix together 1 cup Greek yogurt, 2 beaten eggs, 1 tbsp. oil, 2 tbsp. real maple syrup (to crisp them up), and 1 tsp. vanilla extract.

In a medium bowl mix together:  1 cup mix and 1 cup tapioca flour (or cornstarch), ½ tsp. baking powder, a dash of cinnamon and dash of salt.  

Stir wet and dry ingredients together.  Batter should be thick not runny.  Scoop onto hot grill.  

Makes 4 Belgium Waffles and 12 regular waffles.  To Reheat:  Place in toaster or directly on oven rack at 250.
