Beat together:
2 egg whites until stiff peaks form (a pinch of cream of tartar speeds up the process) Set aside
Add the yolks to the below ingredients and beat again.
2 tbsp. oil or butter
2 tbsp. zero calorie sweetener
1/3 cup cornstarch
2 tbsp. maple syrup (sugar free if keto)
3/4 cup water
1 tsp. vanilla extract
dash cinnamon
Fold in 1 cup almond flour blend until well combined. . Then fold in the egg whites. Let batter rest while you heat up waffle iron. Batter will get thicker as it rests.
Spray waffle iron with cooking spray. and heat waffle maker on high until ready. Pour batter in waffle iron and heat. Extras can be refrigerated or frozen.
To reheat: transfer cooked waffles to the oven in a single layer. Let the waffles crisp for 5 to 7 minutes. You can also place them in a toaster after they have cooled.
Optional (sugar free) chocolate chips; fruit of choice (can use frozen); extract of choice (almond, raspberry, banana, etc.), or nuts.
Makes 4 Waffles. Double the recipe if making 8 waffles.
