These crispy waffles are egg less, dairy free and as always, gluten free. I tried many recipes and this one is my all time favorite. Eggs are one of my favorite foods but this recipe comes out crispier without them. Add berries, bacon bits or chocolate chips to the batter and you will love these!
In a small bowl mix together:
½ cup creamy non-dairy milk slightly warmed + 1 tsp. apple cider vinegar
2 tbsp unsweetened apple sauce (makes them lighter and acts as a binder)
1 Tbsp olive oil or butter
2-tbsp real maple syrup (real syrup helps to crisp them up)
1 tsp vanilla extract
Dash cinnamon (optional)
dash salt
In A medium Bowl mix together:
1 1/4 cup MsPatticakes Pancake and Baking mix
3/4 cup tapioca starch (or arrowroot or cornstarch)
2 tbsp. unsweetened applesauce
1/2 tsp vanilla extract
2 Tbsp. Real Maple syrup
Stir all ingredients together:
Let rest 2 minutes before grilling for them to thicken up.
Set waffle iron to medium heat and spray with cooking spray. Pour batter onto hot grill. Can be frozen. Place in toaster or directly on oven rack at 250 to reheat.
