Low Carb Coffee Cake

 

Stir dry ingredients together:

  • 2 cups low carb flour
  • 1 scoop whey or egg white protein powder
  • 1/2 cup sweetener
  • 1/4 teaspoon salt
  • 1 1/4 teaspoon cinnamon

Beat wet ingredients together:

  • 1/4 cup oil of choice or butter
  • 1/4 cup milk of choice
  • 1/4 cup sugar-free maple flavored syrup
  • 3 eggs room temperature
  • 1/2 cup sour cream (at room temperature)
  •      or Coconut Milk with 1 tbsp. lemon juice per cup
  • 2 teaspoon gluten-free vanilla extract
  • 1 tbsp. apple cider  vinegar

Cinnamon Swirl

  • 3 tablespoons butter softened
  • 1 tablespoon cinnamon
  • 1/2 cup flour
  • 1/2 cup packed swerve brown sugar or Monkfruit

In a small bowl, pinch together the softened butter, flour, sugar and cinnamon until soft crumbs form.  Add cinnamon swirl in lines with a spoon then use a knife to swirl it around.  Use the back of your spoon to level it out.

Optional: For the crumb topping:

  • 5 tablespoon butter cold and cubed
  • 3/4 cup flour
  • 1/2 cup packed brown sugar
  • 1 tablespoon cinnamon

Cut in the chilled butter with a pastry cutter or two forks (or use a food processor or your hands) until the mixture is in pea-sized crumbs.  Keep cold until ready to sprinkle over top of cake.

Instructions

  1. Preheat your oven to 350°F (180°C). Grease an 8x8 baking pan and set aside.
  2. In a large mixing bowl, whisk almond flour, salt, and cinnamon.
  3. Add oil, maple flavored syrup, eggs, and vanilla extract, and mix until well combined.
  4. Spoon 1/2 batter evenly into your prepared pan. 
  5. Add Cinnamon Swirl
  6. Spoon remaining cinnamon swirl into pan
  7. Optional crumb topping: sprinkle mixture on top of cake and press down lightly with the back of a spoon.
  8. Spray foil and cover the cake loosely
  9. Bake for 35-40 minutes, then remove foil and bake 3 more minutes until lightly brown on top.  Cake should be firm in the middle.
  10. Remove from the oven and let cool for 10 minutes before serving.
  11. Store in an airtight container at room temperature.
