Classic Cookie Mix Recipes

Instructions:  Preheat oven to 350 degrees.  Grease or line cookie sheet with parchment paper for easy removal.  Note:  All make 16-18 cookies.

RECIPE:  Combine one of the below flavors (except *Cream Cheese) with 10 tbsp. softened butter, 1 egg (optional), 1 tsp. vanilla extract and 3 cups mix.  Beat until it comes together as dough.  If too dry add a couple tsp. milk of choice.    Drop by rounded teaspoons on baking sheet and flatten using wet fingers or palms. Bake for 11-14 minutes or until the edges begin to lightly brown. Allow them to cool completely before removing.

ALMOND, COCONUT, SUGAR, MAPLE WALNUT, OR LEMON: Replace 1 tsp. vanilla extract from above RECIPE with extract of choice (use vanilla for sugar cookies) or use 1 tsp. sugar free syrup (like salted caramel).  Optional: Press  slivered almonds or unsweetened coconut flakes into cookie tops and bake as noted above.  3 Net Carbs/55 Calories/0 sugar

SHORTBREAD:  Add 1/2 cup walnut or pecan pieces to above RECIPE and bake as noted.  3 Net Carbs/55 calories/0 sugar.

CHOCOLATE CHIP:  Add to the above RECIPE: 1 cup chocolate chips of choice  i.e. white chocolate, sugar free, dark chocolate, semisweet, etc.  Optional add-ins: 1 tsp. cinnamon, dash of sea salt,  1 tbsp. sugar free pancake syrup.  3 Net Carbs/55 calories (before chips).

PEANUT BUTTER:  Melt together 1/3 cup sugar free peanut butter with the melted butter.  Add 1 tbsp. sugar free pancake syrup.  Follow above RECIPE to finish. Optional: add dash of sea salt,  1/2 cup sugar free peanut butter or chocolate chips.  7 net carbs, 95 calories, 3g protein, 1g sugar

OATMEAL:  Replace 1 cup mix with 1 cup quick cooking oats in above RECIPE.  Add  1 tbsp.  (sugar free) pancake syrup,  and 1 tsp. cinnamon to the above and bake as noted.  Optional: Dash sea salt,  1 cup raisins, craisins, chocolate chips or chopped nuts.  3 Net carbs/70 calories/0 sugar

SNICKERDOODLE:  Add to the above RECIPE:  1.5 tsps. cinnamon.  For Cinnamon Sugar Topping: mix 3/4 tbsp. sugar free sweetener with 1/8 tsp. cinnamon and sprinkle over tops of cookies before baking as noted above.    3 net carbs/55 calories/0 sugar

*CREAM CHEESE: Beat 1/4 cup softened butter, 3 oz. softened cream cheese, and 1 tsp. vanilla extract (or 1.5 tsp. lemon extract).  Combine  with 3 cups flour and bake as noted above.   4 Net Carb/ 64 Calories /0 sugar
